Quick buns with jam. Yeast buns with jam

Recently, my children and I read Tove Jansson’s book, “All About the Moomins.” And today I baked the most ordinary ones for them for an afternoon snack. yeast buns with jam. When they returned from their walk and smelled the smell of freshly baked buns, they shouted in unison: “Milk, roses, buns and berries are the best way to celebrate the return of someone home.” So a simple afternoon snack turned out fabulous.

And the recipe for buns is actually very simple, the main thing is that you have a jar of jam, marmalade or marmalade at home.

Yeast buns with jam

Ingredients: 260 ml water, 2 tsp. dry yeast, 3 tbsp. sugar, 1 tsp. salt, 50 grams of butter, 500 grams of flour, 1 tsp. jam on each bun.

First, let's prepare the dough. To do this, dissolve sugar and yeast in warm water, and then let them stand for 10-15 minutes. Then add the remaining ingredients and knead into a soft dough. The butter must be melted before adding to the dough.

Cover the dough with a towel and leave to rise in a warm place for 1.5 - 2 hours.

By the way, if you have a bread machine, then you can knead the dough in it quite easily.

Now that the dough is ready, let's move on to forming yeast buns with jam. Divide the dough into 20 equal balls. I made half a batch of dough so there are fewer bun balls in the photo.

Place the bun balls on a baking sheet previously lined with parchment.

Make a hole in the center of each ball into which to place the jam.

To make delicious buns with jam from yeast dough, you don’t need to use any special knowledge or skills. But the mood when preparing yeast dough must be good, then the baked goods will be fluffy, tender and aromatic, just like grandma’s pies in childhood.

Dedicated to lovers of pastries with sweet filling

To bake buns we will need:

  • Chicken eggs – 2 pieces;
  • Milk with a fat content of 2.5%-3.2% – half a glass (125 ml);
  • Sugar – 4 tablespoons;
  • Butter (or good margarine for baking) – 100 g;
  • Fresh yeast – 25 g;
  • Premium wheat flour – about 400 g;
  • Any jam – 300 g.

As you can see, there are not many ingredients. In fact, these cook quickly, since the dough does not need to be allowed to rise twice, just once is enough. In this master class I will tell you how to wrap it beautifully and so that the jam does not spill out, step by step with photos.

Recipe for buns with jam

  1. Let's start by preparing the dough for the test. Take half a tablespoon of sugar and grind it well with the yeast. Then combine with warm milk (do not overheat it, it should be at body temperature). Add a glass of flour and mix thoroughly.
  2. We leave the dough for about 15 minutes in a warm, dark place (the main thing is without drafts, I leave it in the oven.
  3. In the meantime, prepare the butter ingredients for kneading. Grind the eggs with the remaining sugar according to the recipe (3 tablespoons).
  4. Add butter (it should be very soft, or melted, but not too hot). Mix.
  5. Has it been 15-20 minutes? The dough should fit - grow 2-3 times in volume.
  6. Pour the mixture of rich ingredients into the dough and mix.
  7. Gradually add sifted flour and knead the dough. It should not be steep, elastic. Knead for 5-7 minutes, until the mass stops sticking to your hands.
  8. Take a larger bowl and grease the sides with vegetable oil. Form the resulting dough into a ball and place it in a clean bowl.
  9. Cover with a clean, dry cotton towel and send to rise in a warm place. You can do other things for an hour or just relax.
  10. After an hour and a half, the dough will increase 2-3 times.
  11. You need to crush it well and release excess air. I first divided the dough into 2 parts, then each of them into 8. But it all depends on the shape of the buns; you can divide by more and get small pies, or vice versa.
  12. I rolled out the first half into a round cake and divided it into 8 triangles.
  13. put in jam (I used quince jam, but you can use any jam you have, the only important thing is that it is not too liquid, ideally thick jam).

To prevent the caramel from melting and spreading over the edges of the buns during baking, they need to be rolled more tightly.

Roses

Such beautiful muffins can be made not only with jam, but also with cottage cheese, if you prepare the filling accordingly. They can be prepared from yeast mass or with the addition of baking powder.

  1. Divide the finished dough into equal small portions and roll into balls.
  2. Then, using a rolling pin, roll out our ball so that we get an even circle. We make four symmetrical cuts.
  3. Place jam in the center. For this bun shape, the filling must be very dense, like marmalade.
  4. We lift one petal of the future rose and wrap it around the jam.

  1. We wrap the opposite petal second. Then we do the same with the remaining petals.
  2. The result should be a neat bud.
  3. Place all the preparations on an oiled baking sheet, brush the muffins with whipped yolk and put them in the oven.
  4. Blush roses are ready! I hope that everything is clear step by step in the photo.

Rings

To make these buns, you will need puff pastry, as it retains its shape better. Baking in the form of rings can also be prepared with sugar, cinnamon, and poppy seeds. But since we are talking about jam, we will consider molding with this filling.

  1. Roll out the dough into a rectangular shape. Then we make parallel cuts on it approximately to the midline of the layer.
  2. Place jam on the part of the rectangle that remains intact.
  3. Starting from the edge where the filling lies, wrap the dough into a tube. The cut strips remain on top. Their ends should remain on the bottom side.
  4. As a final step, we connect the ends of the roll to make a ring. Prepared kulebyaki can be sent to the oven!

Classic buns

They are best prepared from yeast or lean dough. Despite the banal shape, such baked goods look very good. Since the buns are closed, you can put any filling inside, as long as it is not very liquid and does not leak out during baking. Although even semi-liquid jam (for example, raspberry jam) can be made thicker if desired.

  1. Divide the dough into small pieces (as for pies). Roll them out into a round layer and place a spoonful of jam in the middle.
  2. We form either a round bun or an elongated pie shape. We pinch the edges.
  3. Brush the top with egg (preferably yolk) and sprinkle with sesame seeds, poppy seeds or sugar. After the future muffins have risen slightly, send them to bake.
  4. The result is very beautiful pumpkins.

Bagels

This form of buns is simple, you just need to correctly cut out the rolled out layer and carefully wrap the bagel.

  1. Roll out a small portion of the dough into a thin round layer. If there are problems with the circle, then you can use a large plate or pan lid as a stencil. Cut the resulting circle like a cake.
  2. Place a spoonful of jam on the outer edge of each triangle.
  3. Starting from the wide edge, roll the dough into a bagel. This must be done carefully so that the filling does not come out around the edges.
  4. To make the baked goods golden brown, brush the surface with beaten egg yolk. After baking, you get quite decent bagels.

Cheesecakes

Not only sweet buns, but also cottage cheese buns are often made in this form. Let's find out how to make them.

  1. We form small balls from the dough and make flat cakes (you can use your hands or a rolling pin). Then, using a glass of a suitable diameter, cut out even circles.
  2. We also use the ring that remains after cutting. We twist it in the form of a figure eight.
  3. The result is two parts of the future bun - the base and the side.
  4. Place the twisted ring on the circle. From below you can slightly pinch the sides and base.
  5. Place a spoonful of any jam or marmalade in the middle of the dough.
  6. Place in the oven for baking.

Daisies

Despite the simple method of production, such baked goods look very elegant and festive. Even a novice cook can master it.

  1. Roll out the finished yeast or puff pastry into a layer and cut out even circles from it. If you have baking skills, you can immediately roll out circles from small donuts without using a mold.
  2. We cut each circle into six petals. We pinch the tip of each petal to make it sharp. The center of the workpiece must be pressed with your finger to make a depression for the filling.
  3. Place all the daisies on a greased baking sheet and only then put the jam in the middle. The petals themselves can be greased with the yolk mixture.
  4. Bake chamomile buns in a preheated oven until golden brown.

Every housewife who is fond of baking knows that the same dough can be used to prepare different delicious things. For example, yeast dough is suitable for buns, fried pies, and delicious baked pies with different fillings. As for the filling, it can be sweet (from apples, cherries), or it can be “serious - from meat or liver.” But in any case, these things may come in handy in the kitchen:

This is another interesting option for how to simply and quickly wrap a product with jam or thick jam.

  1. Take a small amount of dough and roll it into an oval or circle. We make small cuts on both sides.
  2. Place a spoonful of filling on the flatbread - closer to the side from which we will begin to wrap the dough.
  3. We bend one edge so that the filling ends up in the hole. Then we do the same with the second edge.
  4. Ready-made golden brown muffins can be served!

Delicious pastries will go very well with any tea. By the way, do you know how to brew ginger tea? I recommend you a few of this drink. It will be interesting to know your opinion in the comments which forms of buns with jam and marmalade out of the eight presented did you like the most.

Happy cooking! Hope

Today I decided to bake beautiful buns from yeast dough in the oven, which are shaped like a flower. For the filling, I used cherry jam, but it can also be replaced with any other jam, as long as it is thick and homogeneous. Jam, Nutella or even melted chocolate are also great for this. If you want to make them sweeter, you can increase the amount of sugar a little more.

Even a beginner will definitely get such delicious buns with jam prepared according to this recipe with step-by-step photos. Try them too!

Ingredients:

  • Milk – 150 ml. (+ 1 tsp for lubrication)
  • Butter – 30 g
  • Pressed yeast – 7 g
  • Salt – 0.3 tsp
  • Sugar – 50 g
  • Chicken egg – 1 pc. (3/4 into the dough, the rest for greasing)
  • Cherry jam – 3 tbsp
  • Starch – 2 tsp

210 Kcal per 100 g

Quantity: 6 pcs.

Baking in the oven: 20 minutes

Preparing the buns

I beat an egg into a deep bowl, but not a whole one, since half the yolk needs to be left, it will still be useful in the future. I add salt, sugar, butter, which has softened well, and yeast.

Then I pour warm milk into them, the temperature of which is not higher than 40 degrees, that is, it should not be hot, and mix well.

I add 200 grams of flour and mix first with a spatula, and then add more flour and knead the dough.

The dough comes out soft but not sticky and is easy to work with. Now you need it to fit, to do this I cover it with a kitchen towel and leave it like that for about an hour.

I transfer the pitted cherry jam into a sieve to remove the liquid, since it is not appropriate here. When all the liquid is glass, I grind the jam through a sieve to get a more uniform texture that we need.

Then I add starch to it, mix it and the filling is ready.

The dough has doubled in size, which means you can begin further shaping the buns.

Now I’ll show you how to make beautiful buns quickly and easily. Place the dough on a lightly floured surface and divide it into 4 equal parts.

Then I roll the dough into a long tube and fold it, seam side down.

I use sharp kitchen scissors to make oblique cuts, but only cut to the middle.

And now I just twist the dough in a spiral, forming a flower. I start wrapping from the middle.

I transfer them to a baking sheet with parchment or into a greased pan. I brush them on top with the remaining yolk mixed with a spoonful of milk and put them in an already preheated oven, up to 200 degrees for 20 minutes. I check the readiness by piercing the center with a wooden toothpick, which comes out dry when the dough is ready.

Bake these buns with jam from yeast dough in the oven, as they turn out tasty, soft, and also beautiful. Bon appetit!

Option 1: Buns with jam - classic recipe

Traditional buns with jam will be a wonderful treat for any drink: hot or cold. You can choose any jam, the main thing is that it should be thick and seedless. Baked goods made with jam will also work well.

Ingredients:

  • 1 egg;
  • 800 grams of flour;
  • 200 grams of plum jam;
  • 200 ml milk;
  • 50 grams of sugar;
  • 50 grams of butter;
  • 25 grams of fresh yeast.

Step-by-step recipe for buns with jam

Dissolve yeast and granulated sugar in hot milk.

Separate the yolk and white, leave the first for greasing future buns, and add the second to the milk.

Add flour in small portions, stirring, and replace the mixture so that there are no lumps.

Finely chop the butter, add to the mixture, and mix.

Cover the resulting mixture with a napkin and let stand for four hours.

Pull out the dough again and divide it into twelve equal parts, roll each into a rectangle shape.

Place jam in the center of each rectangle, bring the edges together tightly, and roll the dough into a snail shape.

Place the rolls close to each other in a mold with high edges and leave for ten minutes.

Bake for about forty minutes in the oven at 180 degrees, then let cool before removing from the pan.

When the buns are ready, do not rush to transfer them to a plate. To avoid the unpleasant situation when fresh baked goods stick and lose their appearance, you first need to let them cool a little.

Option 2: Quick recipe for buns with jam in the oven

Of course, the easiest way to bake buns is using frozen dough bought at the store, but if you want to do everything yourself and save time, you should try this recipe.

Ingredients:

  • 350 ml milk;
  • 600 grams of flour;
  • 1 egg yolk;
  • 0.5 teaspoons of salt;
  • 7 grams of yeast;
  • 3 tbsp. spoons of sugar;
  • 200 grams of jam.

How to quickly cook buns with jam in the oven

Dissolve the yeast mixture and sugar in one-fourth glass of milk, wrap in cling film and wait until a foamy cap appears on the surface.

Pour the sifted flour into a separate bowl, press a small hole in it and pour in the rest of the milk and yeast mixture, stir.

Pour in the melted butter, add salt, knead again and roll into a ball.

Roll out the dough, shape into a circle, and divide into circles with a glass.

Place a teaspoon of jam in the middle of each circle, pinch the edges, and cover with a napkin or paper towel. Leave for a quarter of an hour.

Beat the yolk with a small amount of clean water.

Grease the envelopes with the mixture, sprinkle lightly with cane sugar and place on a baking sheet lined with foil.

Bake for no more than 15 minutes at 190 degrees.

These buns can be prepared for the holiday table or just like that, for no reason. The recipe is quite easy and does not require much time to complete. You can involve children in the process; they usually really like to make buns, especially with special molds in the shape of animals or some objects - stars or Christmas trees.

Option 3: Buns with jam from yeast dough

Preparing yeast dough requires a little more time and effort from the cook, but the result will live up to expectations. The buns will turn out fluffy, soft and delicious.

Ingredients:

  • 3 eggs;
  • 250 ml milk;
  • 20 grams of sugar;
  • 600 grams of flour;
  • 55 grams of butter;
  • 350 grams of raspberry jam;
  • 25 grams of fresh yeast.

Step by step recipe

The first stage is traditional - the yeast needs to be ground with 50 ml of milk and left for thirteen minutes.

Grind sugar with eggs and heated butter.

In one bowl, combine all of the above, add the remaining milk and half the flour.

To make the dough soft, without stopping stirring, add the second half portion of flour.

Wrap the bowl with its contents in cling film and leave until the dough rises. This will take about an hour.

Knead again and roll into a rectangle.

Spread the dough with jam, leaving one and a half centimeters from the edges.

Fold the rectangle in thirds, secure the edges and cut crosswise into twelve strips, each of which should be no wider than 3 cm.

Twist each strip three times, fold into a ring, seal the edges and place on a baking sheet.

Cook for eighteen minutes in an oven preheated to 190 degrees.

This recipe is also suitable for making savory baked goods: to do this, just replace the sweet ingredient with eggs, spinach, feta cheese.

Option 4: Puff buns with jam

Puff pastry buns are very tasty. It’s not difficult to prepare them; even a novice housewife can handle the recipe, the main thing is to strictly follow the step-by-step instructions.

Ingredients:

  • 1 egg;
  • 500 grams of flour;
  • 8 grams of yeast;
  • 3 tbsp. spoons of sugar;
  • 200 ml milk 2.5%;
  • 60 grams of butter;
  • 80 grams of vegetable oil.

How to cook

Mix yeast and a small amount of flour, add sugar. Heat the mixture a little and mix with the rest of the dry ingredients.

Pour vegetable oil into the mixture.

Separate the white from the yolk, then beat until foamy, then add to the other ingredients and mix. Use the egg yolk at the end to grease future pies.

Sprinkle the flour into the dough, carefully wrap it in cling film and leave in a warm place for an hour and a half.

Divide the resulting dough into five parts, roll them into a ball, cover each with a napkin and leave for at least fifteen minutes.

Roll the balls into flat cakes and grease each with melted butter, put jam on top and roll into rolls, securing the edges.

Mix the yolk with a spoon of milk.

Place the rolls on a baking sheet, brush with the egg-milk mixture and leave aside for fifteen minutes.

Place the baked goods in the oven for twenty-five minutes. Cook at 180 degrees.

The oven must be preheated before placing baked goods in it.

Option 5: Puff pastry buns with jam without yeast

Using ready-made dough without yeast will significantly save cooking time. It only takes ten minutes to form the buns and another half hour to bake. As a filling, you can use any thick seedless jam, marmalade, cottage cheese, chocolate spread or fruits like bananas or apples.

Ingredients:

  • 2 teaspoons milk;
  • 0.5 cups jam;
  • 2 yolks for greasing;
  • poppy or sesame seeds for sprinkling;
  • 900 grams of ready-made puff pastry.

Step by step recipe

Defrost the dough. Under no circumstances should you use a microwave to speed up the process, this will spoil the taste of the future dish.

Roll out the dough in one direction, it is better to lightly sprinkle the surface of the table with flour to avoid sticking.

Divide each layer of dough into four equal pieces.

Use a pastry cutter to cut small holes on one half of each piece and put a little jam in the middle of each. The main thing is not to do this close to the edges so that the jam does not flow.

Cover with the other half and seal the edges.

Mix the yolk with milk and brush the resulting mixture onto the buns.

Preheat the oven to 220 degrees.

Bake for half an hour if using a conventional oven and fifteen minutes if using an electric oven.

Before serving the baked goods, you should give them time to cool and then carefully transfer them to a beautiful dish. You can decorate the buns with powdered sugar or confectionery powder.

Option 6: Butter buns with jam and streusel

For this recipe, it is best to make the dough in a bread machine. Streusel is a confectionery crumb that adds a more elegant and appetizing look to the dish, while also improving the taste. Children especially like these buns. Little gourmets can even be involved in the process.

Ingredients:

  • 150 ml milk;
  • 150 ml kefir;
  • 550 grams of flour;
  • 120 grams of sugar;
  • 8 teaspoons jam;
  • 2 grams of vanillin;
  • 140 grams of margarine;
  • 15 grams of dry yeast;
  • 50 grams of butter.

How to cook:

Replace the dough in the bread machine, load the products according to the instructions (kefir, milk, sugar, vanillin, margarine, flour and yeast).

Knead the dough, then leave it for an hour to rise.

Make crumbs: mix butter, three tablespoons of granulated sugar and the same amount of flour.

Divide the dough into equal parts (about sixteen pieces) and roll into balls.

Dip each ball into vegetable oil, then into the streusel.

Place the balls on a baking sheet lined with pastry paper, so that there is space between them, and leave for half an hour to proof.

Make a small hole in each ball and put jam there.

Bake for fifteen minutes at 220 degrees.

Any of the recipes requires extreme care; it is very important to knead the dough well and remember to give it enough time to rise. Buns are baked only in a preheated oven. To prevent the finished buns from sticking to the baking sheet, you should use special baking paper or foil.
