Oatmeal cooking recipes. What is oatmeal

Even if you don’t delve into ancient Russian food traditions, but just remember your Soviet childhood, you can remember how familiar the now unusual word “tolokno” was. Just some 25-30 years ago, children were fed with it (and adults also enjoyed it willingly); this product could be found in any store.

Today, imported baby cereals are in fashion, and oatmeal has become more of a curiosity, available only in large supermarkets (found in health food departments or, for example, among cereals and flour). And not everyone remembers what it even is. But in vain. We intend to correct this unfortunate misunderstanding and return this product to its former glory, so to speak.

What is oatmeal?

This is the traditional name for whole oat flour. Previously, it was obtained by pounding oats in mortars, hence the name. This product differs from ordinary oatmeal precisely in that it is made from whole grains, while flour is made from grains without the shell and germ - and they contain the largest amount of valuable substances.

This whole grain oat flour was traditionally used in Rus' as a base for many dishes and drinks. They used it to cook porridge, soups, jelly, eat it with kvass, berries, and bake pancakes (we will give some recipes below).

After roasting in the oven, the crushed oats, which received a pleasant specific aroma and shade, were used for drinks (it could be diluted with warm milk or water, without even boiling). This was one of the first products introduced into the diet of infants.

By the way, today people sometimes argue about the benefits or harms of oatmeal as complementary foods, arguing that instant porridge is better. But instant baby oatmeal is actually oatmeal, just called differently!

What are the benefits of this product?

We can briefly say that oatmeal is essentially ground oatmeal. And everyone knows about the benefits of oatmeal.

Oats contain up to 20% easily digestible proteins, as well as dietary fiber, vitamins E, PP and group B, and valuable amino acids. It has an enveloping effect on the gastric mucosa, which makes oat dishes indispensable in the diet of patients with gastrointestinal problems.

Thanks to its composition, oats strengthens hair and heals skin, cleanses the blood of cholesterol, lowers blood sugar levels, and has a positive effect on the nervous system. One of the most valuable properties of crushed oats is to give a long-lasting feeling of fullness, which makes it popular among nutritionists, which we will discuss below.

According to tradition, it is worth saying that even the most healthy product, if consumed in moderation, can cause harm: do not eat too much oatmeal porridge, so as not to disrupt the absorption of calcium in the body. But you have to try very hard to do this - almost eat only oats.

Oatmeal: for weight loss - it's the best!

In addition to the ability to give a feeling of satiety for a long time (“slow” carbohydrates), crushed oats have a low calorie content - 120 Kcal (this is per 100 g of boiled product). Thanks to fiber, it “fills” the stomach well and also slows down the absorption of fats.

In addition, it helps cleanse the intestines, cleanses the blood, removes salts and excess fluid, normalizes the functioning of all digestive organs, and has a positive effect on metabolism. Therefore, this product is widely used in weight loss diets.

Diets based on oatmeal, muesli, oatmeal are pleasant and “not hungry”, do not cause exhaustion of the body, and supply it with necessary substances. The easiest option is to replace breakfast or dinner with a portion of a healthy drink or porridge based on chopped oats.

Oatmeal recipes: tasty and fast!

As we have already said, oatmeal dishes have a long history and are a significant component of ancient Russian cuisine.

  • oatmeal drink: pour 2 tablespoons of oatmeal into a glass of water or milk, add sugar and salt to taste, bring to a boil, stirring continuously, and cook for a couple of minutes (you can add honey instead of sugar, but at the end of cooking, when it has cooled down a little). If you use roasted oatmeal, then you don’t have to boil the drink, but simply pour hot liquid over the crushed oats. The taste is a bit like cocoa;
  • Oatmeal porridge: to 100 ml of boiling milk add 10 g of oatmeal diluted with a couple of tablespoons of cold water (diluted so that it does not form lumps). Mix well, remove from heat. Sugar, salt, butter, etc. add to taste;
  • oatmeal with kvass: just mix roasted crushed oats with homemade bread kvass in arbitrary proportions, add a little honey - and enjoy the old Russian dish (which, by the way, tones the entire body and improves immunity);
  • oatmeal pancakes: sift 1.5 cups of wheat flour and 0.5 cups of oatmeal, add 2 tablespoons of sugar and salt to taste. Beat in 4-5 eggs, add 1 glass of milk and about the same amount of warm water, as well as 2 tablespoons of vegetable oil. Beat the dough thoroughly. If it's too thick, add water. Bake like regular pancakes. It’s delicious with sour cream, butter, jam, and honey. Oatmeal pancakes have a pleasant, unusual taste - and great nutritional value;
  • cranberry-oat dessert: beat cranberries and crushed oats in a blender in a ratio of 2:1 (twice as much cranberries). You need about 5 tablespoons of sugar, but see for yourself;
  • healthy candies: boil 250 g of butter, 8-10 tablespoons of milk, 1 glass of sugar and 2 tablespoons of cocoa over low heat. Add 500 g of oatmeal (you can replace some with oatmeal), 2-3 tablespoons of milk powder, add nuts and dried fruits to taste, mix thoroughly. Cool slightly and roll into balls;
  • fermented jelly: pour 250-300 g of crushed oats into a bowl, pour in 1 liter of warm boiled water, stir, add three or four dried crusts of rye bread, cover with a lid and put in a warm place for 6-8 hours (depending on the temperature , the time may increase to a day, you need to try). During this time, the mixture will ferment and rise well. After this, remove the crusts, add another liter of water, stir, strain through two layers of gauze, and bring to a boil. Add sugar (or honey) to taste. This recipe is reminiscent of the old Russian dish - kulaga, only it is made from rye flour rather than oatmeal and usually berries are added to it. In any case, it is very healthy and tasty. Experiment!

Now let’s talk about how to make simple and healthy cosmetics from oatmeal.

Not only inside, but also outside: oatmeal in home cosmetics

Thanks to its valuable composition, crushed oats have an excellent effect on any skin type. Therefore, masks and scrubs are often prepared from it.

If you have oily or combination skin, then oatmeal masks should be prepared with water, and if dry, with milk. To do this, simply mix the liquid with oatmeal and apply to your face for 15-30 minutes. Rinse with water.

Depending on your skin type and your goal, you can add the following to your masks:

  • lemon (brightens, dries);

  • egg white (tightens pores);
  • various herbal infusions (use instead of water);

Oatmeal is not only oatmeal, but also barley and pea. But oatmeal is the healthiest, has high nutritional value, is indispensable in the diet menu, and is recommended by doctors and cosmetologists.

It is often believed that oatmeal and oatmeal are the same product. This is wrong. To obtain oatmeal, oat grains are steamed (previously this was done in a Russian stove), dried and only then ground. The product acquires many unique properties for which we value it.

How to choose a good product

If you are counting on a healing or cosmetic effect, try not to make a mistake when choosing a product, because its quality differs from different manufacturers. Oatmeal began to be produced industrially already in the 2nd half of the 19th century.

Today this is done on automatic machines using new technologies, thanks to which the medicinal and nutritional value has increased significantly.

The human factor still plays an important role, so when purchasing, make sure:

  • high-quality oatmeal is light, dark color indicates that it is beginning to deteriorate;
  • foreign odors are unacceptable;
  • the packaging must remain intact and sealed.

The quality of the product can be checked by taste: prepared according to all the rules and stored securely, before it ends up on the counter, oatmeal does not crunch in the mouth, but melts.

At home, it is advisable to store your supplies in glass jars under secure lids, in a dark place. The temperature should be around 20 degrees, and the humidity should not exceed 70 percent.

Composition and calorie content per 100 g

The calorie content of 100 g is 363 kcal. Glycemic index – 25 units.

Experts rate the nutritional value highly, noting the balanced composition: carbohydrates account for the total volume from 50 to 65 percent, vegetable protein - from 15 to 20, fats - 5-7 percent.

Among the most valuable components:

  • lecithin is the main structural substance that forms the membranes of nerve fibers and the brain;
  • bioflavonoids – a strong antioxidant that affects the endocrine system;
  • Alanine – helps strengthen the immune system;
  • lignin – a substance that lowers the level of “bad” cholesterol;

For people “in the prime of life” (as one popular literary character called this category of citizens), 400 g of oatmeal provides the daily requirement of dietary fiber, allowing you to be active and do hard physical work.

For adult men and women

Men should not ignore oatmeal, if only because it is rich in zinc, a substance responsible for the presence of testosterone in the body.

If a young person lacks this component, he will lag behind his peers in sexual development.

Zinc is also a protection against infections, inflammation, and also the ability of tissues damaged as a result of injury to quickly regenerate.

The product helps in the fight against excess weight, and this is one of the main (along with alcohol and smoking) causes of impotence.

Copper, which is found in oats, is essential for women's health. It is involved in the production of the sex hormone estrogen, collagen, which is called the “protein of beauty and youth.” Manganese, also included in the chemical composition, can have a positive effect on female reproductive function.

For pregnant and lactating women

It is not so easy for expectant and nursing mothers to choose a menu that is safe for the baby and their own health. In this regard, oatmeal is a product worthy of attention. Included in daily meals, it helps get rid of constipation and prevent the development of anemia. Contained in oat grains, it protects the fetus from congenital pathologies and gives it the opportunity to develop normally in the womb.

Do not neglect oatmeal during breastfeeding, as it enhances milk production.

For children

Before the appearance of ready-made infant formula on sale, oatmeal was for a long time considered the first complementary food given to infants.

Today they are starting to give it (in agreement with the pediatrician) to six-month-old babies.

A thick decoction is useful for anemia, it can normalize the digestive process in a developing body and balance the level of acidity.

For older children, you can cook porridge for breakfast - a simple dish that develops muscle strength in a child, strengthens memory, and helps to develop intellectual abilities.

In old age

For older people, dishes with oatmeal are recommended as a dietary food that is beneficial for the stomach and intestines. This supports the functioning of the heart and blood vessels, helps normalize sleep, which is usually problematic for older people.

With this product you can get rid of age spots: dilute it in sour milk, lubricate problem areas of the skin and leave for 30 minutes.

Special categories

It is rarely suggested to include foods rich in carbohydrates in the menu, but an exception is made for oatmeal: it contains beta-glucans, so the level of sugar in a person’s blood decreases. “Bad” cholesterol is removed from the body, which is also important for diabetics.

For allergy sufferers whose body does not tolerate grains, such food is contraindicated. According to experts, wheat is the most dangerous for these people.

Individual intolerance to cereals usually manifests itself at an early age, when they try to give it to a child. Following wheat on the list of allergenic grains is oats (and its derivatives).

Potential dangers and contraindications

A contraindication to the use of this product is individual intolerance.

There are no other prohibitions on the natural version of oatmeal, which is well absorbed by the digestive system.

However, doctors warn against the dangers of building a menu based on it.

If it is abused, problems with calcium may arise - it will be less absorbed with such a diet, and human bone tissue will suffer.

How to use

It is best to cook oatmeal with water, and not with milk, which not every stomach accepts. The consistency should be a slurry porridge that will envelop the walls of the digestive organs, which will protect a person from gastritis and other problems.

To make food as healthy as possible, it is recommended to replace sugar with honey. You can add pieces of dried fruits and nuts - they will enrich the food with vitamins that are not found in oats.

There are no strict restrictions on the time of use. It’s good if it’s porridge for breakfast - it will give you a feeling of fullness that will last until your next meal.

In cosmetology for skin and hair
