Making the foundation

A brick grill with a smokehouse has quite a significant weight. Therefore, the foundation must be strong. Reinforcement will also need to be done.

Attention: In a smokehouse, the firebox must be below ground level, so this must be taken into account when pouring the foundation.


  • First we make markings on the ground. We mark the dimensions. Here we draw your attention to the fact that the dimensions of the foundation must be larger than the structure itself. We also immediately measure the diagonals and check their location.
  • After digging a hole, the depth of which should be at least 50 cm, we make a sand cushion. We use simple river sand as a material; it shrinks better.
  • Now we make the formwork for the exit of the smokehouse firebox. To do this, we use a simple shalevka.
  • We weld the reinforcement from a metal rod and place it in the hole.
  • We make cement mortar. We are waiting for it to dry completely. The foundation is ready.

Construction of a barbecue

We will start building a grill from a brick smokehouse with a grill.

To make a barbecue with your own hands, you need to acquire the following tools:

  • Shovel.
  • Trowel or trowel for mortar.
  • The level is one hundred and fifty centimeters.
  • Bricks (about one hundred to one hundred and fifty pieces).
  • One hundred and fifty kilograms of sand.
  • Twenty-five kilograms of cement.

Attention: Do not forget that the mortar for laying bricks and foundations will need to be mixed, so stock up on a container. Moreover, we use refractory bricks for the working part.


  • Now we make markings and begin laying. For a fireplace, the walls of the firewood compartment can be laid out to any height and made of any brick. There are no special recommendations on this matter. This will be the fireplace in which you can cook kebabs. You can also install a grill made of stainless steel inside the fireplace.

Attention: The most optimal dimensions of the barbecue are up to one meter long, approximately twenty to twenty-five centimeters deep and forty centimeters wide. To ensure constant access of air to the coals, the firebox of the hearth must be equipped with a ashpit or ash pit.

  • A brick grill smokehouse must have a high-quality dressing. The seam should not match. Also, for strength, a steel mesh is placed in the seam
  • Any barbecue design should have two niches. If it is planned that they will be rectangular, then think in advance about the option with a steel corner on the lintel.
  • If the niches are of an arched type, then it is necessary to make an arch template from plywood or boards. A key brick must be laid in the center of the arch, which will hold the entire structure.
  • The walls of the openings are laid out to a height of fifty to sixty centimeters, if the ceiling is arched, but if it is rectangular, then seventy to eighty.
  • After two rows of bricks are laid on such a floor, the height of the fireplace above the foundation will be up to one hundred centimeters, which is very convenient for most people.
  • The outer part of the grill can be lined with decorative bricks, which will look very impressive. But the internal surfaces must be made of heat-resistant brick, as it can withstand high temperatures without collapsing. The grill has been built, and now you can invite guests to a barbecue.

Creating a smokehouse

Smokehouse grills made of bricks perform different functions. In the smokehouse we must accumulate smoke and release it in the desired direction.

The main difference between a smokehouse and a barbecue or grill is that its firebox is located below ground level. We took this into account when pouring the foundation.


To build a smokehouse we will need:

  • Approximately four meters of metal pipes (you can lay out the chimney yourself from red brick, ensuring its complete tightness).
  • Red brick (one hundred - one hundred and twenty pieces).
  • Shovel (necessary for working with the ground).
  • Trowel for mortar.
  • Up to fifty kilograms of cement.
  • One hundred eighty kilograms of sand.

Attention: The amount of the last ingredients depends entirely on the length of the chimney and the material from which the structure will be made.

  • A container in which the solution will be mixed will also not be superfluous. A sheet of metal with holes for drainage 20x20 or take an old, but not rusty grate.
  • On the surface there will be only a smoking cabinet and a firebox lid. Such a smokehouse will provide cold smoking technology.
  • Between the firebox and the smoking cabinet you need to dig a four-meter-long ditch (it is necessary for the air duct) and lay a pipe. We connect an air duct to the smoking cabinet, so you will need a hole to create a foundation for it.
  • The firebox of the smokehouse is made of brick. The depth is approximately one hundred and fifty centimeters, and the diameter is one hundred. In order for the inside of the firebox to be sealed, it must be coated with clay. We measure ten centimeters from the bottom and make drainage at this level. It is extremely important to provide an air supply to its lower part.

Attention: When laying any metal parts in masonry, be sure to wrap the fastening part with asbestos cord. Then you will avoid problems when expanding the material.

Building a smoking cabinet

The foundation is poured using conventional technology. Its size will depend on the planned smoking volume. But usually the dimensions of the smoking chamber are one and a half, or even twice as large as the volume of the firebox.

The earth needs to be compacted around the entire structure so that the entire system is sufficiently rigid and the aesthetic appearance of the site is not compromised.

  • Remove the lid from the firebox, lay out firewood and paper, and light the fire. We close the lid, but do not forget to leave a small gap so that air can get inside.
  • The smoke will slowly begin to enter the smokehouse through the duct. When there are enough coals, add plum and apple wood chips. All is ready.
  • After the cabinet is filled with thick and dense smoke, it is closed and this means that the smoking process has started.

Do-it-yourself smokehouse and barbecue made of brick are ready. After installation, you must immediately allow the entire structure to dry completely. After this, lightly tread several times.

The brick smokehouse and barbecue must be completely dry, otherwise cracks may occur when heated. After drying, the structure is ready for use.

Step-by-step instructions for building a smokehouse with a barbecue with your own hands.

The first step is to decide on the location of the smokehouse on your site; it is better to place it next to the gazebo, so that everything is at hand while cooking meat and fish, this will make it more convenient to control the process. After which it is necessary to remove the layer of turf and dig a small depression of 15-20 cm for pouring the foundation slab. We make low formwork, and a sand cushion and geotextiles are laid on the bottom.

We are also digging a continuation for laying the chimney; the author makes the base from cement blocks.

Then the firebox is formed, and the chimney pipe is lined with ceramic bricks.

An adapter is put on the end of the pipe.

We fill the cavity between the chimney and the brick wall with sand.

A pedestal was assembled to install the smoking chamber.

A technological hole is sawed in the lower part of the barrel using a grinder (angle grinder). The edges are covered with bricks, and the junction is coated with cement mortar. At the top of the barrel there are perches and hooks for hanging meat.

The barrel should be covered with a tight lid, which the author made from a sawn-off part, built into it a pipe with an adjustable valve and a protective cap.

The firebox has a built-in oven door with an ash pan.

The barbecue oven will have an arched vault, for which the master lays half the walls with ordinary masonry, and then begins to form the vault by placing reinforcement under the edge of each brick.

The masonry is made with cement mortar; it is advisable, of course, to use clay mortar, but it will get wet from rain and the arch may collapse.

The surface of the firebox and walls are covered with decorative stone and ceramic tiles.

This is the kind of wonderful smokehouse with barbecue that the author came up with; in addition, you can make a canopy with a metal roof, but that’s, as they say, “A completely different story.”

Any home craftsman who knows how to work with brick can make an outdoor barbecue oven at his dacha. The purpose of this article is to help the homeowner correctly build a garden stove with his own hands, using a ready-made project with instructions. For convenience, we provide some drawings and examples of masonry.

We are building a barbecue complex with a hob

To build an outdoor stove on a summer cottage, we propose to implement the project shown in the photo. Let us list the technical features of the structure:

  • 2 workplaces capable of functioning simultaneously - barbecue and hob;
  • overall dimensions in plan – 1660 x 1020 mm, height – 3220 mm (including the chimney with the cap);
  • the collection of flue gases from both fireboxes is organized into one pipe;
  • the design is simplified as much as possible - instead of the arched arch of the firebox used in the firebox, there is a direct ceiling on a metal frame;
  • under the kebab grill there is a niche for storing and drying firewood;
  • the chimney is equipped with a closed brick cap, which prevents precipitation from entering the flue.

Note. At the request of the homeowner, the scheme can be changed. For example, install a cauldron instead of a stove, and adapt the grill to a grill. Cabinets for placing dishes or a smokehouse must be built separately.

At first glance, the design of a universal barbecue stove seems complicated, but in reality it is quite simple to implement. It is better to place the structure under a canopy or inside so that the masonry is not washed by rain and lasts longer.

Before starting construction, a platform measuring 176 x 112 cm must be provided on the veranda (a margin of 50 mm on each side of the stove body). Make sure that the chimney pipe does not coincide with the load-bearing roof beams, otherwise the roof will have to be redone.

Construction materials

To build a complex barbecue oven with your own hands, shown in section in the drawing, you will need to buy the following set of materials:

  • clay bricks of standard sizes – 720 pcs. (full-bodied recommended);
  • fireclay stone grade ША-8 for laying fireboxes – 80 pcs.;

  • loading door 25 x 21 cm, ash pan - 25 x 14 cm;
  • cleaning doors 13 x 13 cm – 3 pcs.;
  • equal angle corners 40 x 4 mm, 4 studs with M12 threads and nuts (length - 70 cm) for assembling the floor frame;
  • cast iron panel for 2 burners 71 x 41 cm;
  • sheets of basalt cardboard and roofing felt;
  • periodic profile reinforcement Ø 12-16 mm in the base.

Note. The quantity of bricks is indicated taking into account the construction of the chimney pipe and the cap.

Sectional diagrams of the furnace

For fireclay masonry, you should purchase special refractory clay or mortar. The body of the furnace is laid out on a clay-sand mortar with the addition of M400 cement. Crushed stone, sand and Portland cement will be used to construct the foundation. How much building materials are needed depends on the stability of the soil and the depth of its foundation.

Laying a reinforced concrete foundation

Since the weight of the structure exceeds 1 ton, it cannot be built on the ground or cement screed. A reliable foundation is required, spaced 5-10 cm from the base of the veranda. A foundation pit is dug for construction, the depth of which depends on the occurrence of dense soil horizons. As a rule, it does not exceed 1 m.

Reference. In soils subject to frost heaving forces, it is necessary to build a pile-screw foundation connected by metal beams or a concrete grillage.

The step-by-step foundation laying technology looks like this:

  1. Mark and dig a hole 1760 x 1120 mm, compact the bottom with a vibrating plate or manually. Place a cushion of sand 0.1 m thick and repeat compaction.
  2. Fill the pit to ground level with rubble - fragments of stones, bricks and other solid construction waste, excluding wood. Fill the voids with clay and water slurry and let it harden.
  3. Make a reinforcing mesh by tying the rods at intervals of 10-15 cm. Install it on top of the backfill, lifting it by 3-5 cm using stands so that the rods are in the thickness of the concrete.
  4. Make homemade formwork from boards 20 cm high.

The last stage of pouring is preparing concrete grade 150 and placing the mixture in the formwork. The proportions of bulk materials are 3 parts sand + 5 parts crushed stone per 1 measure of Portland cement M400. Place the upper plane of the monolith horizontally and leave it to harden for 4 weeks. It is recommended to remove the formwork after 7-10 days.

It is advisable to place a layer of roofing material under the reinforced concrete slab for the purpose of waterproofing, as shown in the diagram. Then the monolith will not be saturated with moisture from the soil. More information about laying furnace foundations is described in the video:

Preparing for construction

To begin, cover the hardened concrete slab with 2 layers of roofing felt to ensure waterproofing of the brick structure. Assemble the standard set of stove-maker tools shown in the photo: trowels, brushes, measuring devices, and so on.

You can make the mortar for a backyard barbecue oven yourself or buy a ready-made building mixture. In the first case, proceed in this order:

  1. Soak the clay, as free from soil as possible, in a trough with water for 1-2 days.
  2. Pass the clay solution through a sieve, separating the pebbles and kneading the lumps.
  3. Sift the sand and mix with liquid clay in a ratio of approximately 1:1.
  4. Before laying, add cement in the amount of 200-300 grams per bucket.

The finished solution should not stick too much to the trowel, and when squeezed by hand, give a minimum of cracks. To achieve better properties, experiment with the proportions of sand and clay.

Note. Mortar for fastening refractory bricks is prepared according to the instructions on the packaging (bag).

Laying instructions

To build a brick oven-barbecue, we suggest using step-by-step instructions, accompanied by photos and procedures:


Using the ordering example as a guide, lay out the chimney with the cap closed on top. The height of the pipe can be adjusted by decreasing or increasing the number of identical levels from the 28th to the 38th tier. Advice. If you want to expand the functionality of the structure, simply add additional elements on the sides of the stove. The laying of the rear wall can be continued to the sides using any red brick.

When finished, let the stove dry for 2-4 days, depending on the weather. Then test fire both BBQ chambers using a small amount of wood.

How to lay stove bricks correctly

To successfully build a functional outdoor stove, be sure to follow the following masonry rules:


Remove any mortar protruding outwards with a trowel, and wipe the internal surfaces with a damp cloth. If you lack experience, do not try to chop stones with a pick; it is better to use a grinder with a cutting wheel for concrete.

In conclusion - the simplest stove options

We deliberately proposed to immediately build a serious garden barbecue complex, since a multifunctional oven is of greater interest to users. If you manage to build a similar barbecue out of brick, then adding bedside tables, a smokehouse, and even building a fireplace will not be a big problem.

Instead of a capital structure, you can make a simple structure, shown in the photo. There is no need for mortar, nor is there a need for a foundation: just buy a ready-made barbecue mesh and lay out a brick cabinet according to its dimensions. To prevent the building from collapsing, select a flat, solid platform.

The simplest barbecue with a smoke collector is built in the form of two retaining walls on a cement-sand mortar. A reinforced concrete slab is cast for installing the brazier (or a ready-made one is used). An alternative option is to tie the brick walls together with a frame of corners. What does the smokehouse consist of?

The design of any smokehouse consists of:

  • fireboxes;
  • blower;
  • chimney;
  • smoking chambers;
  • doors;
  • top floor (roof);
  • metal gratings and horizontal bars with hooks;
  • tray for collecting fat.

The wood chips placed in the firebox generate thick smoke, which is fed through the chimney into the smoking chamber. Combustion waste (ash) accumulates in the ash pit located under the firebox. Products in the smoking chamber are laid out on metal grates or hung on special hooks. To collect the resulting fat, it is necessary to install a removable tray.

Preparatory work

Choosing the right location for a stationary smokehouse is of great importance, since the smoking process involves fire, smoke and soot. Laying the foundation

Like any building, a smokehouse needs a solid foundation. The first step is to make markings according to the dimensions of the future smokehouse. To do this, use wooden stakes and cord. For small smokehouses, a foundation 40 cm deep will be sufficient. If a more voluminous structure is being built, the foundation should be deepened further and reinforced when pouring.


Using construction waste to lay a foundation

To fill the foundation, use a cement-sand mixture with the addition of gravel or crushed stone. In some cases, the foundation trench can be filled with construction waste and poured concrete on top. Since the load on the foundation of the smokehouse is small, such a device will be quite sufficient.

Advice. To ensure waterproofing of the foundation, it is recommended to cover it with a layer of roofing felt.

It would be useful to arrange a basement. To do this, it is necessary to build wooden formwork that is wider than the laid foundation.


Ready foundation

Laying out the chimney

The principle of building any smokehouse is the same, regardless of its size and internal structure. First of all, the chimney is laid out - the main working element of the structure.

A trench of the following dimensions is dug in the ground under the chimney:

  • width – 50 cm;
  • depth – 30-40 cm;
  • length - 25-30 cm.

The bottom of the prepared trench is carefully compacted and a row of bricks is laid using clay mortar. It is important that along the length of the chimney there are two bricks located end to end. The chimney channel is limited on one side by the firebox, and on the other by the smoking chamber.

Attention! The smoking chamber should always be located above the firebox.

The chamber location rule implies that the smoke channel should rise from the firebox at an angle of 8-9 degrees. When laying a chimney, the brick is installed on its edge, and the dressing of all seams remains the same. The vertical walls of the chimney are erected to a height of 25 cm. The upper ceiling of the chimney is also made of brick. For convenience, it is recommended to do it in the form of a house.

When the chimney is laid out, you need to let the solution used dry. Next, the chimney is covered with a layer of earth, which is limited by the smoking chamber.

Attention! The chimney should not enter the smoking chamber more than 25-30 cm. The layer of earth poured onto the chimney should be 12-14 cm.

Lay out the smoking chamber

When the chimney is ready, you can begin building the smoking section. Here you can show your imagination by building a round, square or rectangular chamber. Drawings, photos, videos and step-by-step instructions, widely available on the Internet, will come to the rescue. The most important thing is not to rush, but to lay out the brick with high quality. For a home smokehouse, a chamber measuring 1 x 1 m and 1.5 m high will be quite sufficient.

It is advisable to carry out the masonry using clay mortar, laying the brick on the edge. Clay is a natural material and does not emit harmful substances when exposed to high temperatures.


Construction of the smoking chamber

Metal pins are drilled into the upper part of the chamber, onto which a grate or rods with hooks for food will be mounted. At the bottom, you need to provide fastenings for burlap, which is used as a smoke filter. In the middle are fastenings for a removable grease tray.

The top of the chamber is covered with a special lid that regulates the density of the smoke. If the design of the smokehouse provides for the installation of a roof, do not forget about ventilated openings. When the frame of the smoking chamber is ready, you can install the doors and mount devices for laying out products.

Furnace arrangement

The firebox is installed at the end of the chimney opposite from the chamber. Its design is very simple. It is made of thick sheet iron with dimensions of 40 x 35 x 35 cm. A small ash pit is placed under the firebox to collect ash and provide draft in the chimney. The firebox is connected to the chimney at the back or side.
